Ingredients
- 100 g Coriander Leaves
- - Grated Coconut
- 6 pcs White Eggs
- 1 kg Rice
- 500 g Urad Dal
- 200 g Fenugreek Seeds
- 100 g Salt
- 50 g Black Pepper Powder
- medium Chilli Green Long
- 200 ml Mustard Oil
Instructions
- 1. Rinse and soak 1 cup of raw rice and 1/4 cup of urad dal in water for 4-6 hours. Drain the water and grind the rice and dal together with 1/2 cup of grated coconut and a pinch of fenugreek seeds to form a smooth batter. Add 1/2 cup of water to adjust the consistency if needed.
- 2. Transfer the batter to a bowl, add 1/2 tsp of salt, and mix well. Cover the bowl and allow the batter to ferment overnight or for at least 8 hours in a warm place.
- 3. Once the batter has fermented, adjust the consistency by adding 1/4 cup of water if necessary. The batter should be slightly thinner than dosa batter but not watery.
- 4. In a small bowl, whisk 4 eggs with a pinch of salt and 1/4 tsp of black pepper. Optionally, add 2 finely chopped green chilies and 1 tbsp of chopped cilantro for extra flavor.
- 5. Heat a non-stick appam pan or a small wok over medium heat. Grease it lightly with a few drops of oil. Pour a ladleful of the batter into the pan and swirl it around to create a thin, lacy edge with a slightly thicker center.
- 6. Cover the pan with a lid and cook the appam on low-medium heat for 2 minutes until the edges start to crisp up.
- 7. Gently pour 2-3 tbsp of the whisked egg mixture into the center of the appam. Cover the pan again and cook for another 3-4 minutes, or until the egg is fully set.
- 8. Carefully remove the egg appam from the pan using a spatula. Repeat the process with the remaining batter and egg mixture to make more egg appams.
- 9. Serve the egg appams hot with coconut chutney, tomato chutney, or a mildly spiced vegetable stew for a wholesome and flavorful breakfast.
