Ingredients

  • 200 g Paneer
  • 1 kg Basmati Rice
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 200 ml Ghee
  • 100 g Garlic
  • 20 g Cardamom Green
  • 100 g Coriander Leaves
  • 100 g Dalchini (Cassia )
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Tej Patta
  • 20 g Turmeric Powder
  • 1Bunch Pudina

Instructions

  1. 1. Rinse the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. 2. Heat 1 tbsp ghee in a pan and sauté the paneer cubes until golden on all sides. Remove and set aside.
  3. 3. In the same pan, add the remaining ghee and fry cumin seeds, bay leaf, cloves, cardamom, and cinnamon until aromatic.
  4. 4. Add sliced onions and sauté until golden brown. Then, add chopped tomatoes and cook until soft.
  5. 5. Stir in turmeric powder, garam masala, red chili powder, and salt. Add yogurt and mix well.
  6. 6. Add the diced vegetables and cook for 5-7 minutes. Mix in the paneer cubes and fresh coriander and mint leaves.
  7. 7. Layer the soaked rice over the vegetable-paneer mixture without stirring. Pour 1.5 cups of water evenly over the rice.
  8. 8. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and fluffy.
  9. 9. Turn off the heat and let the biryani rest for 5 minutes. Gently fluff the layers with a fork.
  10. 10. Serve warm with a side of raita or a fresh salad.
