Ingredients
- 200 g Paneer
- 1 kg Basmati Rice
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 g Dahi
- 200 ml Ghee
- 100 g Garlic
- 20 g Cardamom Green
- 100 g Coriander Leaves
- 100 g Dalchini (Cassia )
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
- 1Bunch Pudina
Instructions
- 1. Rinse the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- 2. Heat 1 tbsp ghee in a pan and sauté the paneer cubes until golden on all sides. Remove and set aside.
- 3. In the same pan, add the remaining ghee and fry cumin seeds, bay leaf, cloves, cardamom, and cinnamon until aromatic.
- 4. Add sliced onions and sauté until golden brown. Then, add chopped tomatoes and cook until soft.
- 5. Stir in turmeric powder, garam masala, red chili powder, and salt. Add yogurt and mix well.
- 6. Add the diced vegetables and cook for 5-7 minutes. Mix in the paneer cubes and fresh coriander and mint leaves.
- 7. Layer the soaked rice over the vegetable-paneer mixture without stirring. Pour 1.5 cups of water evenly over the rice.
- 8. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and fluffy.
- 9. Turn off the heat and let the biryani rest for 5 minutes. Gently fluff the layers with a fork.
- 10. Serve warm with a side of raita or a fresh salad.
