- 250 g Mutton
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 g Dahi
- 200G Adrak Lasun Paste (200g)
- 100G Oleo
- 100 g Tej Patta
- - Red Chilli Powder
- - Coriander Powder
- 100 g Coriander Leaves
- 20 g Cardamom Green
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Wash the mutton pieces thoroughly and set aside. Finely chop the onions and tomatoes, and whisk the yogurt until smooth.
- 2. Heat vegetable oil in a heavy-bottomed pot over medium heat. Add cumin seeds, bay leaves, and green cardamom pods, and sauté for 30 seconds until aromatic.
- 3. Add the chopped onions and sauté until golden brown, about 8-10 minutes. Stir in the ginger-garlic paste and cook for another 2 minutes.
- 4. Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes soften and the oil begins to separate, about 5-7 minutes.
- 5. Add the mutton pieces to the pot and mix well, ensuring they are coated with the spice mixture. Sauté for 5 minutes to seal in the flavors.
- 6. Lower the heat and add the whisked yogurt gradually, stirring continuously to prevent curdling. Season with salt and mix well.
- 7. Cover the pot with a tight-fitting lid and cook on low heat for 1.5 hours, stirring occasionally. If the gravy thickens too much, add a splash of water to adjust consistency.
- 8. Once the mutton is tender and the gravy is rich, sprinkle garam masala and fresh coriander leaves on top. Stir well and simmer for 2 more minutes.
- 9. Serve hot with steamed basmati rice or naan, garnished with extra coriander leaves.
