Ingredients

  • 250 g Mutton
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 200G Adrak Lasun Paste (200g)
  • 100G Oleo
  • 100 g Tej Patta
  • - Red Chilli Powder
  • - Coriander Powder
  • 100 g Coriander Leaves
  • 20 g Cardamom Green
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash the mutton pieces thoroughly and set aside. Finely chop the onions and tomatoes, and whisk the yogurt until smooth.
  2. 2. Heat vegetable oil in a heavy-bottomed pot over medium heat. Add cumin seeds, bay leaves, and green cardamom pods, and sauté for 30 seconds until aromatic.
  3. 3. Add the chopped onions and sauté until golden brown, about 8-10 minutes. Stir in the ginger-garlic paste and cook for another 2 minutes.
  4. 4. Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes soften and the oil begins to separate, about 5-7 minutes.
  5. 5. Add the mutton pieces to the pot and mix well, ensuring they are coated with the spice mixture. Sauté for 5 minutes to seal in the flavors.
  6. 6. Lower the heat and add the whisked yogurt gradually, stirring continuously to prevent curdling. Season with salt and mix well.
  7. 7. Cover the pot with a tight-fitting lid and cook on low heat for 1.5 hours, stirring occasionally. If the gravy thickens too much, add a splash of water to adjust consistency.
  8. 8. Once the mutton is tender and the gravy is rich, sprinkle garam masala and fresh coriander leaves on top. Stir well and simmer for 2 more minutes.
