- 200 g Paneer
- 1 kg Basmati Rice
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 g Dahi
- 200 ml Ghee
- 200 ml Mustard Oil
- 100 g Garlic
- 20 g Cardamom Green
- 20 g Cinnamon
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 1Bunch Pudina
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
Instructions
- 1. Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- 2. Heat oil and ghee in a large handi or heavy-bottomed pot. Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon; sauté until aromatic.
- 3. Add sliced onions and sauté until golden brown. Stir in chopped tomatoes and cook until soft and mushy.
- 4. Mix in turmeric powder, red chili powder, coriander powder, and garam masala. Cook for 2-3 minutes to toast the spices.
- 5. Add mixed vegetables and paneer cubes, stirring gently to coat them with the spices. Cook for another 2-3 minutes.
- 6. Stir in yogurt and adjust salt to taste. Cook for 2 minutes, ensuring everything is well incorporated.
- 7. Layer the soaked rice evenly over the vegetable-paneer mixture. Sprinkle fresh cilantro and mint leaves on top.
- 8. Cover the handi tightly with a lid or foil to trap the steam. Cook on low heat for 25-30 minutes, allowing the flavors to meld together.
- 9. Turn off the heat and let the biryani rest for 5-10 minutes before opening the lid.
- 10. Fluff the biryani gently with a fork and serve hot with raita or salad.
