  • 1 kg Basmati Rice
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 200 ml Ghee
  • 200 ml Mustard Oil
  • 100 g Garlic
  • 20 g Cardamom Green
  • 20 g Cinnamon
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 1Bunch Pudina
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Tej Patta
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. 2. Heat oil and ghee in a large handi or heavy-bottomed pot. Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon; sauté until aromatic.
  3. 3. Add sliced onions and sauté until golden brown. Stir in chopped tomatoes and cook until soft and mushy.
  4. 4. Mix in turmeric powder, red chili powder, coriander powder, and garam masala. Cook for 2-3 minutes to toast the spices.
  5. 5. Add mixed vegetables and paneer cubes, stirring gently to coat them with the spices. Cook for another 2-3 minutes.
  6. 6. Stir in yogurt and adjust salt to taste. Cook for 2 minutes, ensuring everything is well incorporated.
  7. 7. Layer the soaked rice evenly over the vegetable-paneer mixture. Sprinkle fresh cilantro and mint leaves on top.
