Ingredients
- 1 kg Yellow Moong Dal
- 400-600 g Pumpkin
- 1 piece Banana
- 1Kg Potato
- 500 gm Eggplant
- 250 gm Drumstick
- - Dry Red Chillies
- 200 ml Ghee
- - Grated Coconut
- 20 g Turmeric Powder
- 100 g Salt
- 100 g Tej Patta
Instructions
- 1. Rinse the moong dal thoroughly under running water and soak it for 15 minutes while you prepare the vegetables.
- 2. Peel and chop the vegetables (raw banana, pumpkin, potato, and eggplant) into medium-sized chunks. Slice the drumsticks into 2-inch pieces.
- 3. Heat a heavy-bottomed pan or pressure cooker and dry roast the moong dal on medium heat until it releases a nutty aroma. This should take about 3 minutes.
- 4. Add 4 cups of water to the roasted moong dal, along with the turmeric powder and salt. Bring it to a boil, then reduce the heat and let it simmer for 5 minutes.
- 5. Add the chopped vegetables (except eggplant) and cook for another 10 minutes until they are tender, stirring occasionally.
- 6. In the meantime, prepare the tempering. Heat ghee in a small pan and add panch phoron, dried red chilies, and bay leaf. Sauté for 1-2 minutes until aromatic.
- 7. Once the vegetables are cooked, add the eggplant and the tempering to the dal. Simmer for 5 minutes to let the flavors meld together.
- 8. Finish with freshly grated coconut and serve hot with steamed rice or roti for a wholesome meal.
