Ingredients

  • 1 kg Yellow Moong Dal
  • 400-600 g Pumpkin
  • 1 piece Banana
  • 1Kg Potato
  • 500 gm Eggplant
  • 250 gm Drumstick
  • - Dry Red Chillies
  • 200 ml Ghee
  • - Grated Coconut
  • 20 g Turmeric Powder
  • 100 g Salt
  • 100 g Tej Patta

Instructions

  1. 1. Rinse the moong dal thoroughly under running water and soak it for 15 minutes while you prepare the vegetables.
  2. 2. Peel and chop the vegetables (raw banana, pumpkin, potato, and eggplant) into medium-sized chunks. Slice the drumsticks into 2-inch pieces.
  3. 3. Heat a heavy-bottomed pan or pressure cooker and dry roast the moong dal on medium heat until it releases a nutty aroma. This should take about 3 minutes.
  4. 4. Add 4 cups of water to the roasted moong dal, along with the turmeric powder and salt. Bring it to a boil, then reduce the heat and let it simmer for 5 minutes.
  5. 5. Add the chopped vegetables (except eggplant) and cook for another 10 minutes until they are tender, stirring occasionally.
  6. 6. In the meantime, prepare the tempering. Heat ghee in a small pan and add panch phoron, dried red chilies, and bay leaf. Sauté for 1-2 minutes until aromatic.
  7. 7. Once the vegetables are cooked, add the eggplant and the tempering to the dal. Simmer for 5 minutes to let the flavors meld together.
  8. 8. Finish with freshly grated coconut and serve hot with steamed rice or roti for a wholesome meal.
