Dahi Bhalla is a beloved North Indian snack featuring soft, spongy lentil dumplings soaked in creamy, spiced yogurt and topped with tangy chutneys and aromatic spices. Perfect for family gatherings or festive occasions, this dish offers a delightful mix of textures and flavors.
Ingredients
- 100 g Coriander Leaves
- 500 g Urad Dal
- - Green Chutney
- 200 g Dahi
- 200 ml Mustard Oil
- 500 g Sugar
- 100 g Salt
- 100 g Jeera Powder
- - Red Chilli Powder
- 200 g Black Salt
Instructions
- 1. Wash and soak the urad dal in water for 4-5 hours or overnight.
- 2. Drain the soaked dal and grind it into a smooth paste using minimal water.
- 3. Transfer the paste into a bowl and whisk it vigorously for 3-4 minutes to make it light and fluffy.
- 4. Heat oil in a deep frying pan on medium heat. Wet your hands, scoop small portions of the batter, and shape them into small balls or patties.
- 5. Gently slide the shaped batter into the hot oil and fry until golden brown, turning occasionally. Remove and drain on paper towels.
- 6. Soak the fried bhallas in warm water for 10 minutes to soften them further.
- 7. Meanwhile, whisk the yogurt in a bowl until smooth. Add sugar and salt to taste, and mix well.
- 8. Remove the bhallas from the water and gently press them between your palms to remove excess water.
- 9. Arrange the softened bhallas in a serving dish. Pour the whisked yogurt over them, ensuring they are evenly coated.
- 10. Drizzle tamarind chutney and green chutney over the yogurt. Sprinkle roasted cumin powder, red chili powder, black salt, and coriander leaves for garnish.
