A flavorful and colorful Jain-friendly dish featuring tender corn and vibrant bell peppers, gently spiced with curry powder and enriched with cream. Perfect for a satisfying dinner.
Ingredients
- 125 g Yellow Bell Pepper
- 125 g Red Bell Pepper
- 250 g Organically Grown Green Capsicum
- 250 ml Coco Mama Coconut Milk
- 50 g Sakthi Curry Powder
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 500 ml Conscious Food Cold Pressed Coconut Oil
- 100 g Tata Sampann Whole Spices Cumin Seed
Instructions
- 1. Heat four tablespoons of coconut oil in a skillet over medium heat. Add the diced sweet yellow pepper, sweet red pepper, and green pepper. Cook, stirring, for about one minute.
- 2. Sprinkle the curry powder and a pinch of cumin over the peppers. Cook, stirring, for about 30 seconds to release the aroma of the spices.
- 3. Stir in the remaining two tablespoons of coconut oil and the coconut milk. Bring the mixture to a gentle simmer, stirring occasionally.
- 4. Once heated through, remove from heat and serve the dish hot.
