Ingredients

  • 1 Kg Idly/Dosa Batter
  • 1Kg Potato
  • 500 g Onion
  • 100 g Curry Leaves
  • 100G Oleo
  • 100 G Lasun Khobra Chutney
  • 50 g Asafoetida Powder
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Boil the potatoes in a pot until tender. Once cooled, peel and mash them lightly, keeping some texture intact.
  2. 2. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter, then add cumin seeds, asafoetida, and curry leaves. Sauté for 30 seconds.
  3. 3. Add the chopped onion and green chili to the pan. Cook until the onion turns translucent, about 3-4 minutes.
  4. 4. Stir in the turmeric powder, mashed potatoes, and salt. Mix well to combine all the flavors. Cook for 2-3 minutes, stirring occasionally. Garnish with fresh coriander leaves and set aside.
  5. 5. Heat a non-stick tawa or skillet over medium heat. Pour a ladleful of dosa batter in the center and spread it in a circular motion to make a thin crepe. Drizzle a few drops of oil around the edges.
  6. 6. Cook the dosa until the edges turn golden brown and crisp. Place a portion of the potato masala filling in the center and fold the dosa into a wrap.
  7. 7. Repeat the process with the remaining batter and filling. Serve the crispy masala dosa wraps hot with coconut chutney on the side.
