  • - Coriander Powder
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 100 g Red Chili Powder
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat 2 tbsp of oil in a pan over medium heat. Add mustard seeds and let them splutter, then toss in the curry leaves and sauté for 30 seconds until fragrant.
  2. 2. Add the chopped onions and cook until translucent, about 3-4 minutes. Stir in the tomatoes and cook until they become soft and mushy, about 5-6 minutes.
  3. 3. Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook the spices for 1-2 minutes to enhance the flavor.
  4. 4. Pour in the coconut milk and mix thoroughly. Cook for 2-3 minutes until the sauce is well combined and slightly thickened.
  5. 5. Add the paneer cubes and gently stir to coat them with the sauce. Let the paneer simmer in the sauce for 3-4 minutes to absorb the flavors.
  6. 6. Sprinkle garam masala and add the slit green chili (if using). Mix gently, then turn off the heat.
  7. 7. Garnish with fresh coriander leaves and serve hot with dosa, paratha, or rice.
