This pescatarian-friendly shrimp curry combines tender shrimp with a rich, creamy sauce infused with curry spices. Perfect for a satisfying dinner served over rice.
Ingredients
- 125 g Mooz Butter Garlic & Herbes
- 35 g Foodie Puppies Freeze Dried Shrimp Snack
- 100 g Garlic - Single Clove
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 250 ml Coco Mama Coconut Milk
- 400 g Agapi Protein Greek Yogurt (Natural)
- 50 g Sakthi Curry Powder
- 100 g Zoff Garlic Powder
Instructions
- 1. Melt 4 tablespoons of butter in a large skillet over low heat.
- 2. Add 2 pounds of shrimp to the skillet and sauté for 3 to 5 minutes until they turn pink and are cooked through. Remove the shrimp and set aside.
- 3. In the same skillet, add 1 minced clove of garlic and sauté for 1 minute, stirring frequently to avoid burning.
- 4. Stir in 1 can of coconut milk and 1 can of coconut milk, mixing until well blended.
- 5. Add 3/4 cup of greek yogurt, 1 1/2 teaspoons of curry powder, 1 teaspoon of garlic powder, and 1 tablespoon of lemon juice to the skillet. Stir well and cook over medium heat until the mixture is hot and smooth.
- 6. Return the cooked shrimp to the skillet and gently stir to coat them in the sauce. Cook for an additional 2 minutes until the shrimp are heated through.
- 7. Serve the shrimp curry immediately over steamed rice. Garlic bread makes an excellent side.
