Ingredients
- 200 g Paneer
- 1 kg Basmati Rice
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 ml Ghee
- - Fresh Cream
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
- 1 kg Yellow Moong Dal
Instructions
- 1. Rinse the basmati rice and yellow moong dal thoroughly and soak them in water for 20 minutes. Drain and set aside.
- 2. Heat 2 tablespoons of ghee in a large pan or pressure cooker and add cumin seeds, bay leaf, and slit green chili. Sauté until aromatic.
- 3. Add the chopped onion and sauté until golden brown. Stir in the turmeric powder, coriander powder, and red chili powder, cooking for one minute.
- 4. Add the chopped tomato and cook until softened, forming a thick base for the khichdi.
- 5. Add the rice, dal, and salt to the pan, mixing well with the spice base. Pour in enough water to cover the ingredients generously, and bring to a boil.
- 6. Simmer the mixture, stirring occasionally, until the rice and dal are fully cooked and creamy. Alternatively, pressure cook for 2-3 whistles if using a cooker.
- 7. In a separate pan, lightly sauté the paneer cubes in ghee until golden. Add them to the khichdi along with fresh cream, stirring gently to combine.
- 8. Cook on low heat for 2-3 minutes to allow the flavors to meld. Garnish with chopped coriander leaves and serve hot.
