Ingredients

  • 200 g Paneer
  • 1 kg Basmati Rice
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 ml Ghee
  • - Fresh Cream
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Tej Patta
  • 20 g Turmeric Powder
  • 1 kg Yellow Moong Dal

Instructions

  1. 1. Rinse the basmati rice and yellow moong dal thoroughly and soak them in water for 20 minutes. Drain and set aside.
  2. 2. Heat 2 tablespoons of ghee in a large pan or pressure cooker and add cumin seeds, bay leaf, and slit green chili. Sauté until aromatic.
  3. 3. Add the chopped onion and sauté until golden brown. Stir in the turmeric powder, coriander powder, and red chili powder, cooking for one minute.
  4. 4. Add the chopped tomato and cook until softened, forming a thick base for the khichdi.
  5. 5. Add the rice, dal, and salt to the pan, mixing well with the spice base. Pour in enough water to cover the ingredients generously, and bring to a boil.
  6. 6. Simmer the mixture, stirring occasionally, until the rice and dal are fully cooked and creamy. Alternatively, pressure cook for 2-3 whistles if using a cooker.
  7. 7. In a separate pan, lightly sauté the paneer cubes in ghee until golden. Add them to the khichdi along with fresh cream, stirring gently to combine.
  8. 8. Cook on low heat for 2-3 minutes to allow the flavors to meld. Garnish with chopped coriander leaves and serve hot.
