Corn Medley With Polenta Circles Recipe

A delightful Jain-friendly dinner featuring crispy polenta circles paired with a medley of corn varieties, seasoned with aromatic spices and fresh cilantro.
Ingredients
- 1 Bunch x 2 Coriander Leaves (Kotthambari)
- 400G Freshos Corn Kernels
- 200 g Baby Corn - Packet (Lahan Makka)
- 2 - 3 pcs Gondhoraj Lime
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 250 g Mirchi Powder (Bedagi)
- 100 g Tata Sampann Whole Spices Cumin Seed
Instructions
- 1. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
- 2. When the oil is hot, add 1 3/4 cups of corn kernels and 1 1/2 cups of baby corn to the skillet. Sauté for 3 to 4 minutes, or until lightly golden.
- 3. Sprinkle the sautéed corn mixture with 1 1/2 teaspoons of mirchi powder and a pinch of cumin seed. Stir well and cook for another 2 to 3 minutes, or until fragrant.
- 4. Remove the skillet from heat. Spoon equal amounts of the corn mixture onto individual plates.
- 5. Squeeze fresh lime juice over each serving and garnish with 1/2 cup of chopped fresh coriander leaves before serving.
