Ingredients
- 1 Bunch x 2 Coriander Leaves (Kotthambari)
- 100 g Premium Curry Leaves
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 2.5 Kg Austin Whole Peeled Tomato
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
- 100 g Salt
Instructions
- 1. Cook 1 cup of yellow rice in a medium-sized saucepan according to the package instructions.
- 2. While the rice is cooking, heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium heat.
- 3. Season the skillet with salt and pepper, then add the heated oil. Cook for 2 minutes, stirring occasionally. Remove from heat and set aside.
- 4. Add 1 can of diced tomatoes to the skillet and heat through, stirring occasionally for about 3-4 minutes.
- 5. Once the rice is cooked, fluff it with a fork and transfer it to the serving platter, spreading it out as a base.
- 6. Spoon the heated tomatoes over the rice.
- 7. Sprinkle 1/4 cup of chopped fresh coriander leaves over the dish for a burst of freshness.
- 8. Serve immediately and enjoy your zesty salsa dinner.
