Ingredients
- 500 g Suji
- - Grated Coconut
- 200 g Dahi
- 100 g Jeera
- loose Ginger
- 1 box Baking Soda
- 100 g Coriander Leaves
- 200 ml Mustard Oil
- 100 g Salt
- medium Chilli Green Long
- 100 g Curry Leaves
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Dry roast the rava in a pan over medium heat for 3-4 minutes until aromatic, being careful not to let it brown. Set aside to cool.
- 2. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, curry leaves, chopped green chili, and grated ginger. Sauté for 1-2 minutes until fragrant.
- 3. Add the tempered spices to the roasted rava along with grated coconut, turmeric powder, and salt. Mix well.
- 4. Gradually add yogurt and water to the rava mixture, stirring to combine until a thick batter forms. Let it rest for 10 minutes to allow the rava to absorb the moisture.
- 5. Just before steaming, mix in the baking soda and chopped coriander leaves. Stir gently to incorporate.
- 6. Grease idli molds with a small amount of oil and pour the batter into the molds, filling them about 3/4 full.
- 7. Steam the idlis in a steamer or pressure cooker without the whistle for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
- 8. Remove the idlis from the molds and serve warm with coconut chutney or sambar for a complete breakfast.
