Ingredients

  • 500 g Suji
  • - Grated Coconut
  • 200 g Dahi
  • 100 g Jeera
  • loose Ginger
  • 1 box Baking Soda
  • 100 g Coriander Leaves
  • 200 ml Mustard Oil
  • 100 g Salt
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Dry roast the rava in a pan over medium heat for 3-4 minutes until aromatic, being careful not to let it brown. Set aside to cool.
  2. 2. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, curry leaves, chopped green chili, and grated ginger. Sauté for 1-2 minutes until fragrant.
  3. 3. Add the tempered spices to the roasted rava along with grated coconut, turmeric powder, and salt. Mix well.
  4. 4. Gradually add yogurt and water to the rava mixture, stirring to combine until a thick batter forms. Let it rest for 10 minutes to allow the rava to absorb the moisture.
  5. 5. Just before steaming, mix in the baking soda and chopped coriander leaves. Stir gently to incorporate.
  6. 6. Grease idli molds with a small amount of oil and pour the batter into the molds, filling them about 3/4 full.
  7. 7. Steam the idlis in a steamer or pressure cooker without the whistle for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8. Remove the idlis from the molds and serve warm with coconut chutney or sambar for a complete breakfast.
