Ingredients
- 1 Kg Idly/Dosa Batter
- 200Ml Kara Coconut Milk Classic (200ml)
- 250 G Masur Dal
- 500 g Tomato - Hybrid
- 250 g Spinach
- 250g Green Chilli
- 100G Oleo
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Jeera
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat oil in a pan over medium heat and add cumin seeds and mustard seeds, allowing them to crackle for 30 seconds.
- 2. Add the chopped tomato, green chili, turmeric powder, and coriander powder. Sauté for 3-4 minutes until the tomatoes are soft and the spices are fragrant.
- 3. Stir in the cooked lentils and spinach, cooking for another 2-3 minutes until the spinach wilts.
- 4. Pour in the coconut milk, add salt, and simmer the curry for 5-7 minutes, stirring occasionally. Finish with lemon juice and chopped cilantro.
- 5. Heat a non-stick pan or dosa tawa over medium heat. Pour a ladle of dosa batter and spread it thinly into a circular shape. Cook until crispy and golden brown on one side, about 2 minutes.
- 6. Place a generous portion of the coconut curry in the center of the dosa, roll it tightly into a wrap, and serve immediately.
