Ingredients

  • 1 Kg Idly/Dosa Batter
  • 200Ml Kara Coconut Milk Classic (200ml)
  • 250 G Masur Dal
  • 500 g Tomato - Hybrid
  • 250 g Spinach
  • 250g Green Chilli
  • 100G Oleo
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat oil in a pan over medium heat and add cumin seeds and mustard seeds, allowing them to crackle for 30 seconds.
  2. 2. Add the chopped tomato, green chili, turmeric powder, and coriander powder. Sauté for 3-4 minutes until the tomatoes are soft and the spices are fragrant.
  3. 3. Stir in the cooked lentils and spinach, cooking for another 2-3 minutes until the spinach wilts.
  4. 4. Pour in the coconut milk, add salt, and simmer the curry for 5-7 minutes, stirring occasionally. Finish with lemon juice and chopped cilantro.
  5. 5. Heat a non-stick pan or dosa tawa over medium heat. Pour a ladle of dosa batter and spread it thinly into a circular shape. Cook until crispy and golden brown on one side, about 2 minutes.
  6. 6. Place a generous portion of the coconut curry in the center of the dosa, roll it tightly into a wrap, and serve immediately.
