Ingredients

  • 28 ml Vanilla Essence
  • 150 g Cream Cheese
  • 1 box Baking Soda
  • 50 g Cranberries
  • 500 g Wheat Flour / Maida
  • 500G Madhur Sugar
  • 500 Ml Champion Oil
  • Loose Cardamom

Instructions

  1. 1. Preheat the oven to 180°C (350°F) and grease a small baking tin (6-7 inches) with a little oil or line it with parchment paper.
  2. 2. In a mixing bowl, combine 1 cup of whole wheat flour, 1/2 cup of powdered sugar, and 1/4 teaspoon of baking soda. Mix well to ensure no lumps remain.
  3. 3. Add 1/4 cup of sunflower oil or any other neutral oil to the dry ingredients and mix until the mixture resembles coarse crumbs.
  4. 4. Gradually add 1/2 cup of room-temperature water or almond milk to the mixture, stirring continuously to form a smooth batter. Ensure there are no lumps.
  5. 5. Add 1/2 teaspoon of vanilla essence and a pinch of cardamom powder to the batter for flavor. Mix well.
  6. 6. Fold in 1/4 cup of finely chopped dried cranberries (ensure they are free from any traces of onion or garlic) into the batter.
  7. 7. Pour the batter into the prepared baking tin and spread it evenly using a spatula.
  8. 8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. 9. Remove the cake from the oven and let it cool in the tin for 10 minutes. Then transfer it to a wire rack to cool completely.
  10. 10. For the topping, mix 2 tablespoons of powdered sugar with 1 teaspoon of water or almond milk to form a thin glaze.
  11. 11. Drizzle the glaze over the cooled cake and sprinkle with a few additional chopped dried cranberries for decoration.
  12. 12. Slice the cake and serve. Enjoy your Jain-friendly Christmas Berry Bliss Cake!
