Ingredients
- 28 ml Vanilla Essence
- 100 g Pasteurised Butter
- 150 g Dark Chocolate
- 6 pcs White Eggs
- 500 g Wheat Flour / Maida
- 500 g Sugar
- 50 g Cream Of Tartar
Instructions
- 1. Preheat your oven to 190°C (375°F) and prepare your ramekins by greasing them with butter and dusting with some sugar.
- 2. In a saucepan over low heat, melt 150g of dark chocolate with a small amount of milk (about 2 tablespoons) and 2 tablespoons of butter, stirring until smooth.
- 3. Remove the chocolate mixture from heat and stir in 1 teaspoon of vanilla essence.
- 4. In a separate bowl, whisk together 2 tablespoons of flour and a pinch of salt.
- 5. Gradually add the dry mixture to the melted chocolate until well combined and smooth.
- 6. In another bowl, whisk 4 large egg whites to form soft peaks, gradually adding 1/4 cup of sugar while whisking to create stiff peaks.
- 7. Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate the batter.
- 8. Fill each prepared ramekin about three-quarters full with the chocolate mixture.
- 9. Bake in the preheated oven for 12-15 minutes until the soufflés have risen and are set on the outside, but still slightly jiggly in the center.
