Ingredients

  • 28 ml Vanilla Essence
  • 100 g Pasteurised Butter
  • 150 g Dark Chocolate
  • 6 pcs White Eggs
  • 500 g Wheat Flour / Maida
  • 500 g Sugar
  • 50 g Cream Of Tartar

Instructions

  1. 1. Preheat your oven to 190°C (375°F) and prepare your ramekins by greasing them with butter and dusting with some sugar.
  2. 2. In a saucepan over low heat, melt 150g of dark chocolate with a small amount of milk (about 2 tablespoons) and 2 tablespoons of butter, stirring until smooth.
  3. 3. Remove the chocolate mixture from heat and stir in 1 teaspoon of vanilla essence.
  4. 4. In a separate bowl, whisk together 2 tablespoons of flour and a pinch of salt.
  5. 5. Gradually add the dry mixture to the melted chocolate until well combined and smooth.
  6. 6. In another bowl, whisk 4 large egg whites to form soft peaks, gradually adding 1/4 cup of sugar while whisking to create stiff peaks.
  7. 7. Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate the batter.
  8. 8. Fill each prepared ramekin about three-quarters full with the chocolate mixture.
  9. 9. Bake in the preheated oven for 12-15 minutes until the soufflés have risen and are set on the outside, but still slightly jiggly in the center.
