Ingredients
- 100 g Baby Spinach
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 100 g Catch Sprinklers - Iodized Table Salt
- 60G Primi Piatti Red Chilli Flakes
- 100 g Jk Jeera Powder / Cumin Powder
- 1 kg Twf Bread Flour T55 - Specialised Maida
- 16 g Orika Oregano
- 400G Chtoura Foods Boiled Chickpeas In Brine
Instructions
- 1. Heat 2 tablespoons of vegetable oil in a cast iron dutch oven or a large pot over medium heat.
- 2. Add 1 diced onion and sauté until soft and translucent, about 5 minutes.
- 3. Add 1 cup of boiled chickpeas to the pot and cook, stirring occasionally, until heated through.
- 4. Stir in 1 teaspoon of salt, 1/2 teaspoon of red pepper flakes, 1 tablespoon of cumin, 3 minced garlic cloves, and 1 teaspoon of oregano. Mix well to combine.
- 5. Sprinkle 3 tablespoons of flour over the mixture and stir thoroughly to coat the ingredients.
- 6. Pour in 3 cups of water, stirring to scrape up any bits stuck to the bottom of the pot.
- 7. Add 2 cups of canned chickpeas (drained and rinsed) and 4 cups of fresh spinach. Stir until the spinach wilts and combines with the other ingredients.
- 8. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-45 minutes, stirring occasionally.
- 9. Remove from heat and serve hot. Optionally, garnish with grated cheese and serve with crusty bread.
