A refreshing and elegant Italian-inspired pasta that celebrates the simplicity of citrus. Tender sautéed chicken breast is tossed with al dente penne in a silky, lightweight sauce made from fresh lemon zest, lemon juice, and a touch of pasta water and Parmesan. The result is a vibrant, tangy meal that feels indulgent but remains light and energizing.
Ingredients
- 500G Gustora Penne Rigate Pasta
- 100 g Lemon
- 250 ml Olive Oil
- 100 g Coriander Leaves
- 100 g Salt
- - Chicken Breast
- 2 pcs Zucchini
- 7g Chilli Flakes
- 100 g Garlic
- 100 g Parmesan Cheese
- 250 G Asparagus(250 Gm)
Instructions
- 1. Boil the penne in salted water. Before draining, reserve ½ cup of the starchy pasta water. This is the secret to the sauce.
- 2. While pasta boils, toss the asparagus with a drizzle of Olive oil and roast at 200°C for 10 minutes. Simultaneously, sauté the chicken in a pan with garlic until golden and cooked through.
- 3. Lower the heat of the chicken pan. Add the lemon zest, lemon juice, and half of the reserved pasta water. Stir in the cooked penne and the grated Parmesan.
- 4. Toss everything together vigorously. If the pasta looks dry, add more pasta water until a silky, light sauce coats the noodles. Fold in the roasted asparagus and fresh parsley.
- 5. Garnish with freshly chopped coriander leaves and serve warm.
