Tender sautéed chicken breast is tossed with al dente penne in a silky, lightweight sauce made from fresh lemon zest, lemon juice, and a touch of pasta water and Parmesan. The result is a vibrant, tangy meal that feels indulgent but remains light and energizing.

Ingredients

  • 500G Gustora Penne Rigate Pasta
  • 100 g Lemon
  • 250 ml Olive Oil
  • 100 g Coriander Leaves
  • 100 g Salt
  • - Chicken Breast
  • 2 pcs Zucchini
  • 7g Chilli Flakes
  • 100 g Garlic
  • 100 g Parmesan Cheese
  • 250 G Asparagus(250 Gm)

Instructions

  1. 1. Boil the penne in salted water. Before draining, reserve ½ cup of the starchy pasta water. This is the secret to the sauce.
  2. 2. While pasta boils, toss the asparagus with a drizzle of Olive oil and roast at 200°C for 10 minutes. Simultaneously, sauté the chicken in a pan with garlic until golden and cooked through.
  3. 3. Lower the heat of the chicken pan. Add the lemon zest, lemon juice, and half of the reserved pasta water. Stir in the cooked penne and the grated Parmesan.
  4. 4. Toss everything together vigorously. If the pasta looks dry, add more pasta water until a silky, light sauce coats the noodles. Fold in the roasted asparagus and fresh parsley.
  5. 5. Garnish with freshly chopped coriander leaves and serve warm.
