Ingredients
- 100 g Coriander Leaves
- 1 kg Basmati Rice
- 500 g Chicken Whole
- 200 ml Ghee
- 500 g Onion
- 500 g Tomato - Hybrid
- 200G Adrak Lasun Paste (200g)
- 20 g Cinnamon
- 50 g Cloves
- 20 g Turmeric Powder
- - Red Chilli Powder
- - Coriander Powder
- 50 g Cumin Powder
- 100 g Salt
- 100 g Tej Patta
Instructions
- 1. Wash the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 15 minutes and then drain.
- 2. Heat ghee in a large heavy-bottomed pot over medium heat. Add the whole spices—bay leaf, cinnamon stick, cloves, and green cardamom—and sauté until fragrant, about 1-2 minutes.
- 3. Add the sliced onions to the pot and cook until golden brown, stirring frequently, about 6-8 minutes.
- 4. Stir in the ginger-garlic paste and sauté for 1-2 minutes until the raw aroma disappears.
- 5. Add the chopped tomatoes and cook until soft and the oil starts separating from the mixture, about 5 minutes.
- 6. Add the chicken pieces to the pot along with turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Stir well to coat the chicken in the spices. Cook for 8-10 minutes, stirring occasionally.
- 7. Add the drained basmati rice to the pot and gently mix it with the chicken and spices. Pour in 4 cups of water and bring to a boil.
- 8. Once the water starts boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 15 minutes or until the rice is fully cooked and fluffy.
- 9. Turn off the heat and let the Chicken Bhaat rest for 5 minutes. Gently fluff the rice with a fork and garnish with chopped fresh cilantro.
- 10. Serve hot with a side of yogurt or raita and enjoy this flavorful one-pot meal with your family.
