Ingredients

  • 250 ml Fresh Cream
  • 200 g Cream Cheese
  • 500 g Digestive Biscuits
  • 100 G Tea Masala / Chai Masala 100 G
  • 100 g Unsalted Butter
  • 200 g Table Salt
  • 500G Madhur Sugar

Instructions

  1. 1. Prepare the Chai Infusion: In a small pot, combine 1 cup of water, 1 teaspoon of tea leaves, and 1 teaspoon of chai masala. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 2 minutes. Strain the mixture to remove the tea leaves and spices, and measure out ¾ cup of the chai brew. Let it cool completely before using.
  2. 2. Make the Biscuit Crust: Reserve a few digestive biscuits for garnish. Place the remaining biscuits in a blender and pulse until they form fine crumbs. Transfer the crumbs to a bowl and mix with 4 tablespoons of melted unsalted butter. If using unsalted butter, add ¼ teaspoon of table salt to enhance the flavor. Stir until the mixture resembles wet sand.
  3. 3. Prepare the Cream Cheese Batter: In a large mixing bowl, beat 200 grams of softened cream cheese with a hand mixer or whisk until smooth and creamy. Gradually add 3 tablespoons of powdered Madhur sugar and continue to beat until fully incorporated. In a separate chilled bowl, whip ½ cup of fresh cream to stiff peaks using a hand mixer. Gently fold the whipped cream into the cream cheese mixture using a spatula. Once combined, slowly add the cooled chai infusion, a little at a time, tasting as you go. Adjust the flavor by adding more chai infusion if desired, but ensure the batter remains thick and does not become runny.
  4. 4. Assemble the Cheesecake Jars: Divide the biscuit crust mixture evenly among individual jars or serving glasses, pressing it firmly into the bottom to create a compact layer. Reserve some of the biscuit crumbs for garnish. Spoon the cream cheese batter over the crust in each jar, filling them about ¾ full. Smooth the tops with the back of a spoon or spatula.
  5. 5. Chill the Cheesecakes: Cover each jar with cling wrap or a lid and place them in the refrigerator. Allow the cheesecakes to chill for at least 4 hours or, for best results, overnight. This will help the flavors meld and the batter set properly.
  6. 6. Garnish and Serve: Before serving, sprinkle the reserved biscuit crumbs over the top of each cheesecake jar. For an elegant touch, insert half a digestive biscuit into the top of each jar as decoration. Serve immediately and enjoy this creamy, chai-infused dessert!
