Ingredients
- 250 ml Fresh Cream
- 200 g Cream Cheese
- 500 g Digestive Biscuits
- 100 G Tea Masala / Chai Masala 100 G
- 100 g Unsalted Butter
- 200 g Table Salt
- 500G Madhur Sugar
Instructions
- 1. Prepare the Chai Infusion: In a small pot, combine 1 cup of water, 1 teaspoon of tea leaves, and 1 teaspoon of chai masala. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 2 minutes. Strain the mixture to remove the tea leaves and spices, and measure out ¾ cup of the chai brew. Let it cool completely before using.
- 2. Make the Biscuit Crust: Reserve a few digestive biscuits for garnish. Place the remaining biscuits in a blender and pulse until they form fine crumbs. Transfer the crumbs to a bowl and mix with 4 tablespoons of melted unsalted butter. If using unsalted butter, add ¼ teaspoon of table salt to enhance the flavor. Stir until the mixture resembles wet sand.
- 3. Prepare the Cream Cheese Batter: In a large mixing bowl, beat 200 grams of softened cream cheese with a hand mixer or whisk until smooth and creamy. Gradually add 3 tablespoons of powdered Madhur sugar and continue to beat until fully incorporated. In a separate chilled bowl, whip ½ cup of fresh cream to stiff peaks using a hand mixer. Gently fold the whipped cream into the cream cheese mixture using a spatula. Once combined, slowly add the cooled chai infusion, a little at a time, tasting as you go. Adjust the flavor by adding more chai infusion if desired, but ensure the batter remains thick and does not become runny.
- 4. Assemble the Cheesecake Jars: Divide the biscuit crust mixture evenly among individual jars or serving glasses, pressing it firmly into the bottom to create a compact layer. Reserve some of the biscuit crumbs for garnish. Spoon the cream cheese batter over the crust in each jar, filling them about ¾ full. Smooth the tops with the back of a spoon or spatula.
- 5. Chill the Cheesecakes: Cover each jar with cling wrap or a lid and place them in the refrigerator. Allow the cheesecakes to chill for at least 4 hours or, for best results, overnight. This will help the flavors meld and the batter set properly.
- 6. Garnish and Serve: Before serving, sprinkle the reserved biscuit crumbs over the top of each cheesecake jar. For an elegant touch, insert half a digestive biscuit into the top of each jar as decoration. Serve immediately and enjoy this creamy, chai-infused dessert!
