Ingredients
- 100 g Coriander Leaves
- 1 kg Basmati Rice
- 1 kg Bombil Fish
- 500 g Onion
- - Baby Tomatoes
- 20 g Turmeric Powder
- - Red Chilli Powder
- 500 Ml Champion Oil
- 100 g Jeera
- 25 g Ginger Garlic Paste
- 200 g Table Salt
Instructions
- 1. Clean and wash the bombil fish thoroughly, then pat it dry using a kitchen towel.
- 2. Chop the coriander (kothambir/sambhar) and set aside.
- 3. Chop the onions and tomatoes into small pieces.
- 4. In a mixing bowl, marinate the bombil fish with 1 tablespoon of Everest turmeric powder, 1 tablespoon of Everest red chili powder, and a pinch of salt. Let it rest for 15-20 minutes.
- 5. Heat a pan over medium heat and add 2 tablespoons of oil.
- 6. Add 1 teaspoon of earthon organic cumin seeds to the hot oil, and let them splutter.
- 7. Add the chopped onions to the pan and sauté until they turn golden brown.
- 8. Stir in 25 g of Smith & Jones ginger garlic paste and cook for 2-3 minutes until the raw smell disappears.
- 9. Add the chopped tomatoes to the pan and cook until they become soft and mushy.
- 10. Lower the flame and gently lay the marinated bombil fish into the pan in a single layer.
- 11. Cook the fish for 5-6 minutes on each side until it is completely cooked and blends with the spices.
- 12. Sprinkle the chopped coriander over the fish, cover, and cook for an additional 2 minutes.
- 13. Turn off the heat and let the dish rest for a few minutes before serving.
- 14. Serve Bombil Goa hot with steamed rice or as a side dish.
