Ingredients
- 100 g Coriander Leaves
- 1 kg Bombil Fish
- 1 kg Rice
- 100 g Lemon
- - Rice Flour
- 20 g Turmeric Powder
- - Red Chilli Powder
- - Coriander Powder
- 100 g Salt
- 200G Adrak Lasun Paste (200g)
- 1 liter Sunflower Oil
Instructions
- 1. Clean the Bombay Duck (Bombil) thoroughly by removing the head, tail, and internal organs. Rinse gently and pat dry using kitchen towels.
- 2. Prepare the marinade by mixing turmeric powder, red chili powder, coriander powder, salt, ginger-garlic paste, and lemon juice in a bowl.
- 3. Rub the marinade evenly onto each piece of Bombay Duck and let it rest for 10 minutes to absorb the flavors.
- 4. Heat a shallow pan and add oil for frying. Dredge each marinated Bombay Duck piece in rice flour to coat evenly.
- 5. Carefully place the coated Bombay Duck pieces into the hot oil and shallow-fry on medium heat for 4-5 minutes per side until golden and crispy.
- 6. Remove the fried Bombay Duck from the pan and place on a plate lined with paper towels to drain excess oil.
- 7. Prepare steamed rice by rinsing 2 cups of rice under water until the water runs clear. Cook the rice in a pot with 4 cups of water on medium heat until tender, approximately 15 minutes.
- 8. Serve the crispy Bombil Fry alongside the freshly steamed rice, garnished with lemon wedges and chopped coriander leaves.
