Ingredients
- 100 g Coriander Leaves
- 500 g Onion
- 1 kg Basmati Rice
- 500 g Moong Dal
- 200 ml Ghee
- 200 g Table Salt
- 50 g Cloves
- - Bay Leaf
- 20 g Cinnamon
- 300 g Ginger Paste
- Loose Cardamom
Instructions
- 1. Wash 1 kg of Daawat basmati rice and 500g of Organic Tattva moong dal thoroughly and soak them separately in water for about 30 minutes.
- 2. In a heavy-bottomed pot, heat 200 ml of Mother's Dairy Cow ghee over medium heat.
- 3. Add 2-3 bay leaves, 4-5 cloves, 2-3 cardamom pods, and a small stick of cinnamon to the ghee and fry them for a minute until fragrant.
- 4. Slice 500g of onions thinly, add them to the pot, and sauté until they turn golden brown.
- 5. Add 2 tablespoons of Mother's Recipe ginger paste and cook for another 2 minutes until the raw smell dissipates.
- 6. Drain the soaked rice and moong dal and add them to the pot, stirring gently to coat them with the ghee and spices.
- 7. Pour in enough water to cover the rice and dal by an inch, then add salt to taste using the Tata Salt Sprinkler and bring to a boil.
- 8. Once boiling, reduce the heat to low, cover the pot, and let the khichuri simmer until the rice and dal are fully cooked and the water is absorbed, about 20-25 minutes.
- 9. Turn off the heat and let the khichuri sit covered for an additional 5 minutes to allow the flavors to meld.
- 10. Garnish with roughly chopped coriander leaves before serving. Enjoy your Bhogar Khichuri warm.
