A hearty and satisfying dinner featuring tender baked green peppers stuffed with a flavorful mixture of ground beef, rice, and mixed vegetables, topped with a rich tomato sauce.
Ingredients
- 2 Medium Green Capsicum (Dappa Menasinakaayi)
- 500 g Spt Frozen Mixed Vegetables
- 525 g Veeba Herby Tomato Pizza & Pasta Sauce
- 1 kg Basmati Rice
- 50 g Black Pepper
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Cut the tops off 6 green peppers and remove the seeds and membranes. Rinse the peppers thoroughly.
- 3. Bring a large pot of water to a boil. Add the peppers and cook for 3-4 minutes until slightly tender. Remove and set aside to cool.
- 4. In a large skillet over medium heat, cook 1 cup of cooked basmati rice until heated through.
- 5. Return the cooked rice to the skillet and add 2 cups of mixed vegetables and 1 cup of tomato sauce. Stir well to combine and let the mixture simmer for 10-15 minutes.
- 6. Arrange the prepared green peppers upright in a 9 x 13-inch baking dish.
- 7. Spoon the rice and vegetable mixture into each pepper, filling them to the top. If there is any leftover filling, spread it around the peppers in the dish.
- 8. Cover the dish with aluminum foil and bake in the preheated oven for 10 minutes.
- 9. Remove the foil, spoon the remaining 1 cup of tomato sauce over the tops of the peppers, and bake uncovered for an additional 15 minutes.
- 10. Remove from the oven and let cool slightly before serving. Enjoy your stuffed peppers warm!
