Ingredients

  • 2 Medium Green Capsicum (Dappa Menasinakaayi)
  • 500 g Spt Frozen Mixed Vegetables
  • 525 g Veeba Herby Tomato Pizza & Pasta Sauce
  • 1 kg Basmati Rice
  • 50 g Black Pepper

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Cut the tops off 6 green peppers and remove the seeds and membranes. Rinse the peppers thoroughly.
  3. 3. Bring a large pot of water to a boil. Add the peppers and cook for 3-4 minutes until slightly tender. Remove and set aside to cool.
  4. 4. In a large skillet over medium heat, cook 1 cup of cooked basmati rice until heated through.
  5. 5. Return the cooked rice to the skillet and add 2 cups of mixed vegetables and 1 cup of tomato sauce. Stir well to combine and let the mixture simmer for 10-15 minutes.
  6. 6. Arrange the prepared green peppers upright in a 9 x 13-inch baking dish.
  7. 7. Spoon the rice and vegetable mixture into each pepper, filling them to the top. If there is any leftover filling, spread it around the peppers in the dish.
  8. 8. Cover the dish with aluminum foil and bake in the preheated oven for 10 minutes.
  9. 9. Remove the foil, spoon the remaining 1 cup of tomato sauce over the tops of the peppers, and bake uncovered for an additional 15 minutes.
  10. 10. Remove from the oven and let cool slightly before serving. Enjoy your stuffed peppers warm!
