Ingredients
- 100 g Curry Leaves
- 250 g French Beans
- - Grated Coconut
- 500 g Curd
- 250 gm Drumstick
- 3 Kg Petha White/Ash Gourd(3 Kg-4.5 Kg)
- 200 g Table Salt
- 100 g Jeera
- 20 g Turmeric Powder
Instructions
- 1. Wash and peel 1 cup of drumsticks, 1 cup of ash gourd, 1 cup of raw banana, and 1 cup of green beans. Cut them into 2-inch long pieces.
- 2. In a large pot, add the chopped vegetables and pour in 1/2 cup of water. Add 1/2 tsp turmeric powder and 1/2 tsp salt. Cover and cook on medium heat until the vegetables are tender but not mushy.
- 3. In a blender, grind 1/2 cup grated coconut, 2 green chilies, and 1 tsp cumin seeds into a coarse paste using a little water.
- 4. Add the coconut paste to the cooked vegetables and mix well. Simmer on low heat for 3-4 minutes.
- 5. Turn off the heat and add 1/2 cup of whisked yogurt. Stir gently to combine.
- 6. Heat 1 tbsp of coconut oil in a small pan. Add 6-8 curry leaves and let them sizzle for a few seconds. Pour this tempering over the avial and mix lightly.
- 7. Serve hot with steamed rice or as a side dish.
