  • 300 g Ginger Paste
  • 200 ml Mustard Oil
  • 100 g Badishep Big Premium
  • 100 g Tej Patta
  • 100 g Garlic
  • 500 g Chicken Whole
  • 20 g Cardamom Green
  • - Mint Leaf
  • - Red Chilli Powder
  • 100 g Dalchini (Cassia )
  • 100 g Curry Leaves
  • 1 kg Basmati Rice
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the seeraga samba rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. 2. Heat 2 tablespoons of refined oil and 1 tablespoon of ghee substitute in a large heavy-bottomed pan or pressure cooker over medium heat. Add fennel seeds, bay leaves, green cardamom pods, cloves, and cinnamon stick. Sauté until aromatic, about 1-2 minutes.
  3. 3. Add the slit green chilies, ginger paste, mint leaves, and curry leaves. Sauté for another 2-3 minutes until the raw aroma dissipates.
  4. 4. Add the chicken pieces to the pan and cook until they are lightly browned on the outside, about 5 minutes.
  5. 5. Sprinkle turmeric powder, red chili powder, and biriyani masala powder over the chicken. Mix well to coat the chicken evenly with the spices.
  6. 6. Add the soaked and drained seeraga samba rice to the pan and gently mix it with the chicken and spices, ensuring the rice is well-coated.
  7. 7. Pour in enough hot water to cook the rice and chicken (approximately 1.5 times the volume of rice). Stir gently and bring the mixture to a boil.
  8. 8. Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is fully absorbed.
