- 500 g Weikfield Cornstarch Amazingly Versatile Gluten Free
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 900 G Kikkoman Naturally Brewed Dark Soy Sauce
- 500 ml Conscious Food Cold Pressed Coconut Oil
Instructions
- 1. In a shallow dish, mix 1/4 tsp pepper, 1 tsp salt, and 1/4 cup cornstarch until well combined.
- 2. Coat 4 pieces of pineapple chunks with the cornstarch mixture, ensuring an even layer on all sides. Use a meat mallet to gently pound the pineapple on both sides to tenderize.
- 3. Heat 2 tbsp cooking oil in a large skillet over medium heat. Add the pineapple and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- 4. In the same skillet, combine 3/4 cup light corn syrup, 1/2 cup lemon juice, 3 tbsp ketchup, 2 tbsp soy sauce, and 1 cup diced pineapple. Stir well and bring the mixture to a simmer.
- 5. Add 1 sliced green capsicum to the skillet and cook for 3-4 minutes until slightly tender. Return the pineapple to the skillet, spooning the sauce over them. Simmer for an additional 5 minutes to allow the flavors to meld.
- 6. Serve the pineapple hot, topped with the pineapple and green capsicum sauce. Pair with steamed rice or noodles for a complete meal.
