Instructions
- 1. Slice 1 cup of peeled sambar onions into thin rings and set aside.
- 2. Heat 2 tablespoons of vegetable oil in a large frying pan over medium-high heat. Add the sliced onions and cook until softened and lightly browned, about 5-7 minutes.
- 3. Add 3 minced garlic cloves to the pan. Stir-fry for 2-3 minutes until fragrant.
- 4. Add 1 cup of sliced carrots, 1 cup of chopped celery, and 1 cup of sliced mushrooms to the pan. Stir-fry for 5-7 minutes until the vegetables are tender.
- 5. Pour 2 cups of water into the pan and bring to a simmer. Cover and cook for 20 minutes, stirring occasionally. Add more water if needed to prevent sticking.
- 6. In a small bowl, mix 2 tablespoons of flour with 2 tablespoons of water to form a smooth paste. Gradually stir this mixture into the pan to thicken the sauce.
- 7. Cook for an additional 5 minutes, stirring frequently, until the gravy thickens and coats the vegetables evenly.
- 8. Serve the vegetable stir-fry hot over steamed rice or cooked noodles.
