Ingredients

  • 200 ml Coconut Milk
  • 500 g Urad Dal
  • 1 kg Idli Rice
  • 200 g Table Salt

Instructions

  1. 1. Rinse 1 cup of raw rice and 1/4 cup of parboiled rice thoroughly, then soak them in water for 4-5 hours.
  2. 2. Soak 1/4 cup of urad dal (black gram) in a separate bowl for the same duration as the rice.
  3. 3. Drain the water from the soaked rice and dal, then grind them separately into smooth batters using a wet grinder or mixer. Add water as needed to achieve a thick but pourable consistency.
  4. 4. Combine the rice batter and urad dal batter in a large mixing bowl. Add 1/2 teaspoon of salt and mix well to combine.
  5. 5. Cover the batter with a lid or cloth and allow it to ferment for 8-10 hours or overnight in a warm place.
  6. 6. After fermentation, gently stir the batter. If it is too thick, add a little water to achieve a slightly runny consistency.
  7. 7. Heat a well-seasoned appam pan or non-stick kadai on medium heat. Lightly grease it with a few drops of oil using a cloth or paper towel.
  8. 8. Pour a ladleful of batter into the center of the pan and quickly swirl it around to form a thin, even layer with slightly thicker edges.
  9. 9. Cover the pan with a lid and cook for 2-3 minutes or until the edges turn golden brown and the center is cooked through.
  10. 10. Remove the appam carefully using a spatula and place it on a plate. Repeat the process with the remaining batter.
