Ingredients
- 100 g Coriander Leaves
- 1 kg Sweet Potato
- medium Chilli Green Long
- 100 g Lemon
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Peel and slice the sweet potatoes into thin matchstick-sized strips, ensuring even thickness for uniform frying.
- 2. Heat mustard oil in a frying pan on medium heat until it begins to shimmer, then add cumin seeds and asafoetida, letting them sizzle for 30 seconds to release their aroma.
- 3. Add the sweet potato strips to the pan and toss well to coat them evenly with the oil and spices. Sprinkle turmeric powder, red chili powder, and salt over the potatoes, mixing thoroughly.
- 4. Cook the sweet potatoes on medium heat, stirring occasionally, for 10-15 minutes until they turn golden brown and crisp. Adjust the heat as needed to prevent burning.
- 5. Once the sweet potatoes are cooked, remove them from the heat and toss with chopped fresh coriander leaves and sliced green chili for a fresh, zesty finish.
- 6. Transfer the Alu Bhaja to a serving plate and garnish with a squeeze of lemon juice if desired. Serve hot and enjoy!
