Ingredients
- 100 g Curry Leaves
- 100 g Coriander Leaves
- 200 ml Ghee
- - Dry Red Chillies
- loose Ginger
- 1 kg Yellow Moong Dal
- 1 kg Basmati Rice
- 20 g Turmeric Powder
- 100 g Salt
- 100 g Jeera
- 100 g Yellow Mustard Seeds
- 100 g Tej Patta
Instructions
- 1. Wash the rice and moong dal thoroughly. Soak the rice for 10 minutes and keep the dal aside.
- 2. Heat 1 tablespoon of ghee in a large pot, add cumin seeds, bay leaves, and dry red chilies. Sauté for 1 minute until aromatic.
- 3. Add the moong dal to the pot, stir, and dry roast it for 3 minutes until it emits a nutty aroma.
- 4. Add the soaked rice to the pot along with 5 cups of water, turmeric powder, and salt. Mix well and bring it to a boil.
- 5. Lower the heat, cover the pot with a lid, and let the rice and dal cook for 15 minutes, stirring occasionally to avoid sticking.
- 6. While the rice and dal are cooking, prepare the vegetables by washing, peeling, and chopping them into medium-sized pieces.
- 7. In a separate pan, heat 1 tablespoon of ghee, add the chopped vegetables, and sauté for 5 minutes.
- 8. Add the sautéed vegetables to the rice and dal mixture, stir well, and cook for 5 more minutes until the vegetables are tender.
- 9. Prepare the tempering by heating 1 tablespoon of ghee in a small pan. Add mustard seeds, curry leaves, and grated ginger. Let it sizzle for 1 minute.
- 10. Pour the tempering over the cooked Abadha, mix gently, and garnish with freshly chopped coriander leaves before serving.
