Ingredients
- - Fresh Tofu
- - Tong Garden Cheddar N Jalapeno Chickpeas
- 500 g Onion
- 1 piece Yellow Bell Pepper
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Jeera
- 100 g Salt
- 200 ml Coconut Milk
- 200 ml Mustard Oil
- - Coriander Powder
Instructions
- 1. Chop the tofu into small cubes and set aside.
- 2. Heat mustard oil in a pan and add cumin seeds; let them sizzle for 30 seconds.
- 3. Add finely chopped garlic and ginger; sauté until fragrant for about 1 minute.
- 4. Add sliced onions and cook until golden brown, stirring occasionally.
- 5. Add diced tomatoes, turmeric, red chili powder, coriander powder, and salt; cook until the tomatoes soften and spices blend.
- 6. Add the chopped green bell pepper and stir-fry for 2-3 minutes to retain a slight crunch.
- 7. Stir in the cooked chickpeas and tofu cubes, mixing them gently to coat with the spices.
- 8. Pour in the coconut milk, reduce the heat, and simmer for 5 minutes to allow the flavors to meld together.
- 9. Adjust the seasoning as needed and simmer for another 2 minutes.
- 10. Garnish with fresh coriander leaves before serving hot.
