Ingredients
- 1 Bunch Nectr Mint Leaves (Chemical Free)
- 100 g Romaine Lettuce
- 2 x 400 g Good To Go Boneless Chicken Breast - Pack Of 2
- 3 pcs Cucumber Green
- 125 g Red Bell Pepper (Lal Shimla Mirchi)
- 100 g Jk Jeera Powder / Cumin Powder
- 430Ml Hellmanns Mayonnaise Squeeze Real
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 1 kg Simply Staples Mineral Rich Sea Salt
- 100 g Everest White Pepper
Instructions
- 1. Adjust the oven rack to the lower middle position and preheat the oven to 500°F. Using a sharp knife, cut the chicken breasts in half crosswise. Season with 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Arrange the chicken pieces on a roasting pan, bone side down, and roast for 10 minutes.
- 2. Carefully flip the chicken pieces using tongs and roast for another 10 minutes, or until the meat is fully cooked and the juices run clear. Remove from the oven and let the chicken cool completely.
- 3. Once the chicken is cool, remove the skin and any bones. Slice the chicken lengthwise into thin strips.
- 4. Cut 1 cucumber crosswise into thirds. Halve each third lengthwise, remove the seeds with a spoon, and slice into thin strips. Dice 1 red pepper into small pieces. Finely chop 4 tablespoons of fresh mint leaves.
- 5. In a medium-sized bowl, combine the sliced chicken, cucumber, red pepper, and chopped mint. In a separate small bowl, mix together 4 tablespoons lemon juice, 2 teaspoons ground cumin, 1/2 cup mayonnaise, 1 teaspoon kosher salt, and a pinch of freshly ground black pepper.
- 6. Pour the mixture over the chicken mixture and gently toss to combine. Taste and adjust seasoning if needed.
- 7. To assemble the sandwiches, place a leaf of romaine lettuce on one slice of bread. Add 1 cup of the chicken salad mixture on top, then cover with another slice of bread. Repeat this process to make four sandwiches.
- 8. Serve the sandwiches immediately, optionally accompanied by potato chips or a side of your choice.
