Ingredients

  • 1 kg Basmati Rice
  • 1 pack (200 g) Godrej Real Good Medium Prawns Peeled & Deveined (Freshly Frozen)
  • 1 piece Coconut

Instructions

  1. 1. Rinse the rice thoroughly under water and set it aside to drain.
  2. 2. In a pot, heat 200 ml of coconut milk and 300 ml of water over medium heat until simmering.
  3. 3. Add the rinsed rice and 0.5 tsp of salt to the pot, cover, and cook until the rice is tender and fluffy.
  4. 4. While the rice cooks, peel and devein the prawns, ensuring they are clean and ready to use.
  5. 5. Finely chop the garlic, ginger, and green chili, and set them aside for stir-frying.
  6. 6. Heat 2 tbsp of vegetable oil in a large pan over medium heat and add the chopped garlic, ginger, and green chili.
  7. 7. Stir-fry the aromatics until fragrant, then add the prawns to the pan.
  8. 8. Sprinkle turmeric powder and coriander powder over the prawns, stirring well to coat evenly.
  9. 9. Cook the prawns for 5-7 minutes, stirring occasionally, until they turn pink and are cooked through.
  10. 10. Taste and adjust seasoning with salt, if needed, then remove the prawns from heat.
  11. 11. Fluff the coconut rice with a fork and transfer it to serving plates.
