Ingredients
- 100 g Curry Leaves
- 100 g Coriander Leaves
- 500 g Onion
- - Tomato Ketchup
- 200 ml Coconut Milk
- 100 g Garlic
- loose Ginger
- 250g Green Chilli
- 200 ml Mustard Oil
- 100 g Lemon
- 200 g Mixed Sprouts
- 20 g Turmeric Powder
- 100 G Goda Masala
- 100 g Yellow Mustard Seeds
- 100 g Salt
Instructions
- 1. Wash and boil the mixed sprouts until tender but firm, then drain and set aside.
- 2. Heat oil in a pan and add mustard seeds; let them splutter before adding curry leaves.
- 3. Add chopped onions, garlic, ginger, and green chilies, sautéing until golden and aromatic.
- 4. Stir in chopped tomatoes, turmeric powder, red chili powder, and goda masala, cooking until the tomatoes soften.
- 5. Pour in the coconut milk and simmer the mixture for 5 minutes until it thickens slightly.
- 6. Add the boiled sprouts to the pan, mixing well to coat them in the flavorful sauce.
- 7. Season with salt and cook for another 5 minutes to ensure the sprouts absorb the flavors.
- 8. Garnish the dish with freshly chopped coriander leaves and a squeeze of lemon juice.
- 9. Serve hot, topped with sev for crunch and accompanied by pav if desired.
