Ingredients

  • 100 g Curry Leaves
  • 100 g Coriander Leaves
  • 500 g Onion
  • - Tomato Ketchup
  • 200 ml Coconut Milk
  • 100 g Garlic
  • loose Ginger
  • 250g Green Chilli
  • 200 ml Mustard Oil
  • 100 g Lemon
  • 200 g Mixed Sprouts
  • 20 g Turmeric Powder
  • 100 G Goda Masala
  • 100 g Yellow Mustard Seeds
  • 100 g Salt

Instructions

  1. 1. Wash and boil the mixed sprouts until tender but firm, then drain and set aside.
  2. 2. Heat oil in a pan and add mustard seeds; let them splutter before adding curry leaves.
  3. 3. Add chopped onions, garlic, ginger, and green chilies, sautéing until golden and aromatic.
  4. 4. Stir in chopped tomatoes, turmeric powder, red chili powder, and goda masala, cooking until the tomatoes soften.
  5. 5. Pour in the coconut milk and simmer the mixture for 5 minutes until it thickens slightly.
  6. 6. Add the boiled sprouts to the pan, mixing well to coat them in the flavorful sauce.
  7. 7. Season with salt and cook for another 5 minutes to ensure the sprouts absorb the flavors.
  8. 8. Garnish the dish with freshly chopped coriander leaves and a squeeze of lemon juice.
  9. 9. Serve hot, topped with sev for crunch and accompanied by pav if desired.
