Ingredients

  • - DELI QUINOA/BASMATI RICE 1KG
  • 1 kg Basmati Rice
  • 2 - 3 pcs Gondhoraj Lime
  • 250 g Tendercuts Basa Boneless Fillet F&S
  • 200 ml Mustard Oil
  • 1 pack (100 g) Everest - Ginger Garlic Paste
  • 20 g Turmeric Powder
  • 50 g Everest Cumin Powder
  • - Red Chilli Powder
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • - Frozen Mixed Vegetables
  • - Dark Soy Sauce-90 GM
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )

Instructions

  1. 1. Rinse the long-grain rice thoroughly under cold water and soak it for 10 minutes.
  2. 2. Heat 1 tablespoon of cooking oil in a large pan over medium heat and add the ginger garlic paste.
  3. 3. Once fragrant, stir in the turmeric powder, cumin powder, red chili powder, and salt.
  4. 4. Add the fish fillets to the pan and cook for 3-4 minutes on each side until they are golden and cooked through.
  5. 5. Remove the cooked fish from the pan and set it aside while keeping it warm.
  6. 6. In the same pan, add the remaining oil and the frozen mixed vegetables, stir-frying for 3-4 minutes.
  7. 7. Drain the soaked rice and add it to the pan along with 300ml of water. Stir well to combine.
  8. 8. Cover the pan with a lid and let the rice cook on low heat for 12-15 minutes until it is tender and fluffy.
  9. 9. While the rice is cooking, squeeze the juice of one lime over the cooked fish for a zesty flavor boost.
  10. 10. Once the rice is cooked, fluff it gently with a fork and mix in the soy sauce.
  11. 11. Serve the rice in bowls, topped with the cooked fish and stir-fried vegetables.
  12. 12. Garnish with freshly chopped coriander leaves and a wedge of lime for added freshness.
