Ingredients
- - DELI QUINOA/BASMATI RICE 1KG
- 1 kg Basmati Rice
- 2 - 3 pcs Gondhoraj Lime
- 250 g Tendercuts Basa Boneless Fillet F&S
- 200 ml Mustard Oil
- 1 pack (100 g) Everest - Ginger Garlic Paste
- 20 g Turmeric Powder
- 50 g Everest Cumin Powder
- - Red Chilli Powder
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- - Frozen Mixed Vegetables
- - Dark Soy Sauce-90 GM
- 1 Bunch Coriander Leaves ( Kottambari Soppu )
Instructions
- 1. Rinse the long-grain rice thoroughly under cold water and soak it for 10 minutes.
- 2. Heat 1 tablespoon of cooking oil in a large pan over medium heat and add the ginger garlic paste.
- 3. Once fragrant, stir in the turmeric powder, cumin powder, red chili powder, and salt.
- 4. Add the fish fillets to the pan and cook for 3-4 minutes on each side until they are golden and cooked through.
- 5. Remove the cooked fish from the pan and set it aside while keeping it warm.
- 6. In the same pan, add the remaining oil and the frozen mixed vegetables, stir-frying for 3-4 minutes.
- 7. Drain the soaked rice and add it to the pan along with 300ml of water. Stir well to combine.
- 8. Cover the pan with a lid and let the rice cook on low heat for 12-15 minutes until it is tender and fluffy.
- 9. While the rice is cooking, squeeze the juice of one lime over the cooked fish for a zesty flavor boost.
- 10. Once the rice is cooked, fluff it gently with a fork and mix in the soy sauce.
- 11. Serve the rice in bowls, topped with the cooked fish and stir-fried vegetables.
- 12. Garnish with freshly chopped coriander leaves and a wedge of lime for added freshness.
