  • 20 g Oregano - Herbs Mix
  • 100 g Lemon
  • 500Ml Gaia Extra Virgin Olive Oil (500ml)
  • 25 g Whole Black Pepper
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 kg Beetroot
  • - Frozen Mixed Vegetables

Instructions

  1. 1. Mince the garlic and finely chop the parsley, setting both aside for the marinade.
  2. 2. In a bowl, combine garlic, olive oil, parsley, oregano, black pepper, salt, and lemon juice to create a marinade.
  3. 3. Coat the chicken breast evenly in the marinade and let it rest for 10 minutes.
  4. 4. Heat your air fryer to 200°C and place the marinated chicken inside, cooking for 12-15 minutes until golden and cooked through.
  5. 5. Rinse the rice thoroughly under running water to remove excess starch.
  6. 6. In a pot, bring water to a boil, then add the rice, a pinch of salt, and grated fresh turmeric; cook for 12 minutes.
  7. 7. While the rice cooks, steam the frozen mixed vegetables until tender and vibrant in color.
  8. 8. Fluff the rice with a fork, then mix in the steamed vegetables and a splash of lemon juice for added brightness.
  9. 9. Plate the rice mixture and top with the grilled chicken, garnishing with fresh parsley.
