- 50 g Honey
- 200 g Sweetened Condensed Milk
- 50 g Cinnamon Powder
- 250 ml Coconut Milk
- 200 g Table Salt
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 500 Ml Champion Oil
Instructions
- 1. Rinse 1 cup of wild rice thoroughly under cold water to remove any impurities.
- 2. In a medium-sized pot, add the rinsed wild rice and 3 cups of water. Bring to a boil over high heat.
- 3. Once boiling, reduce the heat to low, cover the pot with a lid, and let the rice simmer for 45-50 minutes, or until the rice is tender and has absorbed most of the water.
- 4. While the rice is cooking, peel and finely chop 1 medium-sized carrot and 1 small onion.
- 5. Heat 1 tablespoon of vegetable oil in a separate pan over medium heat.
- 6. Add the chopped onion to the pan and sauté for 2-3 minutes until it becomes translucent.
- 7. Add the chopped carrot to the pan and continue to sauté for another 3-4 minutes until the carrot softens slightly.
- 8. Once the wild rice is cooked, add the sautéed onion and carrot mixture to the pot with the rice.
- 9. Stir in 1 cup of coconut milk, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, and salt to taste. Mix well to combine.
- 10. Let the porridge simmer on low heat for an additional 5-7 minutes, allowing the flavors to meld together.
- 11. Taste and adjust the seasoning if needed, adding more salt or spices as desired.
- 12. Remove the pot from the heat and let the porridge sit for 2-3 minutes before serving.
- 13. Serve the wild rice breakfast porridge hot, garnished with freshly chopped coriander leaves and a squeeze of lemon juice if desired.
