White Beans With Roasted Cherry Tomatoes Recipe

A simple yet flavorful Jain-friendly dinner dish featuring tender white beans and roasted cherry tomatoes, seasoned with aromatic spices for a wholesome meal.
Ingredients
- 1 Bunch x 2 Coriander Leaves (Kotthambari)
- 200 g Cherry Tomatoes
- 100 g X 3 Mtr Turmeric Powder | Arisina Pudi Combo
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
Instructions
- 1. Soak 250 g of cherry tomatoes in water to cover overnight.
- 2. Drain the soaked cherry tomatoes and place them in a large pot. Add 1 tsp Tata Salt and enough water to cover the tomatoes. Simmer for 45 minutes to an hour, or until they are tender.
- 3. Preheat the oven to 300 degrees.
- 4. Slice 8 cherry tomatoes in half and place them on an oiled roasting dish. Sprinkle with 1/2 tsp Namakwali Authentic Mix Seasoning Flavoured Salt and 1/2 tsp turmeric powder for added flavor. Roast for 30 minutes to an hour, or until they begin to shrivel and brown around the edges.
- 5. Remove the roasted tomatoes from the oven and set them aside. They may lose their shape, but this does not affect the dish.
- 6. Season the cooked tomatoes with 1 tsp Tata Salt and 1/2 tsp Tata Sampann Pure Black Pepper Powder. Stir well to combine.
- 7. Transfer the seasoned tomatoes to a heated serving dish and top with the roasted cherry tomatoes.
- 8. Garnish with 2 tbsp chopped fresh coriander leaves and serve warm.
