Ingredients
- 100 g Coriander Leaves
- Pcs Catch Sendha Namak
- 100 Ml Govind Ghee
- 50G Green Chilies
- 500 g Sabudana / Sago
- 100 g Jeera
- 200G Sur Rajgira Flour
Instructions
- 1. In a large mixing bowl, combine 1 cup of rajgira flour, 1/2 cup of water chestnut (singhara) flour, and 1/2 cup of tapioca (sabudana) flour.
- 2. Add 1/4 cup of finely chopped fresh coriander leaves, 2 finely chopped green chilies, 1/2 tsp cumin seeds, and 1/2 tsp rock salt. Mix well.
- 3. Gradually add water (about 1/2 cup) and knead the mixture into a soft dough. Add 1 tsp of ghee while kneading for smoothness. Let the dough rest for 10 minutes.
- 4. Divide the dough into small portions and roll each into a ball. Flatten each ball slightly between your palms.
- 5. Place a parchment paper or banana leaf on a flat surface. Grease it lightly with ghee. Place one dough ball on it and gently press with your fingers to form a flat, round thalipeeth (about 5-6 inches in diameter).
- 6. Heat a non-stick tawa or skillet over medium flame. Grease it lightly with ghee and carefully transfer the shaped thalipeeth onto the tawa.
- 7. Cook on one side for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes, applying a little ghee around the edges.
- 8. Repeat the process with the remaining dough. Serve the thalipeeth hot with plain yogurt or green chutney.
