Ingredients

  • 14 g On1Y Basil Leaves
  • 25 g Parsley
  • 10 g Fresh Thyme
  • 400 g Agapi Protein Greek Yogurt (Natural)
  • 1 kg Whole Farm Premium Brown Rice
  • 50 g Sakthi Curry Powder
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)
  • 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
  • 50 g On1Y Onion Powder

Instructions

  1. Blend the onion powder into the yogurt and let it stand for 2 hours to develop flavor.
  2. Cook the wild rice according to package directions and set aside.
  3. In a saucepan, combine 1 cup of water with a pinch of curry powder for added depth. Bring to a simmer and reduce the liquid to about 1 1/2 cups.
  4. Slowly combine the hot liquid mixture with the yogurt mixture, adding a little at a time to prevent curdling.
  5. In a large mixing bowl, combine the cooked wild rice with the prepared sauce. Add the curry powder, basil, thyme, salt, pepper, and parsley, and mix well.
  6. Transfer the mixture into a buttered casserole dish and spread evenly.
  7. Bake the casserole uncovered at 250°F for 30 minutes until heated through and slightly golden on top.
  8. Serve warm and enjoy. This dish can also be frozen for later use.
