Ingredients

  • 500 g Carrot
  • 100 g Sambar Onion Peeled
  • 250 g Organically Grown Green Capsicum
  • 125 g Red Bell Pepper
  • 400 g Organically Grown Cabbage (Patta Gobhi)
  • 1 kg Tata Plus Iron Health, Double Fortified Salt
  • 2 x 170 ml Masterchow White Vinegar - Pack Of 2
  • 1 kg Whole Farm Grocery Sugar (Packet)
  • 1 pack (100 g) Zoff Big Fennel Seeds Whole - Saunf

Instructions

  1. 1. Finely chop 1 medium head of cabbage, 8 medium carrots, 1 large onion, 1 sweet green pepper, and 1 sweet red pepper.
  2. 2. Place the chopped vegetables in a large bowl and sprinkle with 2 tablespoons of salt. Mix well and let it sit for 2 hours to draw out excess moisture.
  3. 3. After 2 hours, drain any liquid from the vegetables and return them to the bowl.
  4. 4. In a separate small bowl, mix 1 cup of vinegar, 1 cup of sugar, and 1 tablespoon of fennel seeds until the sugar dissolves.
  5. 5. Pour the vinegar mixture over the vegetables and toss thoroughly to combine.
  6. 6. Transfer the slaw to a clean jar or airtight container and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  7. 7. Serve chilled as a light dinner or side dish. Store leftovers in the refrigerator for up to a week.
