Ingredients

  • 100 g Sambar Onion Peeled
  • 1 pc Cabbage Red
  • 250 g Organic Certified Green Capsicum (Donne Menasinakaayi)
  • 1 Piece Red Bell Pepper (Kempu Dappa Menasinakaayi)
  • 250 g Organically Grown Green Capsicum
  • 1 kg Whole Farm Grocery Sugar (Packet)
  • 1 Kg Turmeric Powder (Haldi)
  • 640Ml Shao Hsing Double Pagoda Cooking Vinegar
  • 1 kg Simply Staples Mineral Rich Sea Salt

Instructions

  1. 1. Chop 7 onions, 1 cabbage, 10 green tomatoes, 12 green peppers, and 6 red peppers into small pieces.
  2. 2. Grind the chopped vegetables in a blender until finely minced.
  3. 3. Transfer the minced vegetables to a large plastic dishpan and sprinkle 1/2 cup canning salt evenly over the top. Let it sit overnight.
  4. 4. The next day, drain the mixture in a large colander and rinse thoroughly under cold water. Drain well.
  5. 5. In a large pot, combine 6 cups sugar, 1 tablespoon celery seed, 1 1/2 teaspoons turmeric, and 4 cups vinegar. Bring the mixture to a boil over medium heat.
  6. 6. Add the drained vegetable mixture to the boiling liquid and stir well.
  7. 7. Boil the mixture for 5 minutes, stirring occasionally to ensure even cooking.
  8. 8. Carefully ladle the hot relish into sterilized jars, leaving about 1/2 inch of space at the top.
  9. 9. Seal the jars tightly and process them in a hot water bath for 5 minutes.
  10. 10. Allow the jars to cool completely before storing. Serve as a flavorful accompaniment to your dinner.
