Ingredients
- 500 g X 2 Organically Grown Potato Combo
- 125 g Mooz Butter Garlic & Herbes
- 250 g Organically Grown Green Capsicum
- 125 g Red Bell Pepper
- 100 g Sambar Onion Peeled
- 500 ml Sids Farm Toned Milk
- 200 g Cremeitalia Sour Cream
Instructions
- 1. Preheat the oven to 400°F (200°C). Scrub the potatoes clean and pierce them several times with a fork. Place them on a baking sheet and bake for 1 hour until tender.
- 2. While the potatoes bake, melt the Mooz Butter Garlic & Herbes in a nonstick skillet over medium heat. Add the diced green bell pepper, red bell pepper, and sweet onion. Sauté for 5-7 minutes until the vegetables are tender.
- 3. Once the potatoes are done, remove them from the oven and let them cool slightly. Reduce the oven temperature to 350°F (175°C).
- 4. Slice the tops off the potatoes and carefully scoop out the pulp, leaving the skins intact to form a shell. Place the potato pulp in a mixing bowl.
- 5. Mash the potato pulp and mix in Sids Farm Toned Milk, cremeitalia sour cream, and the sautéed vegetables. Stir until well combined.
- 6. Spoon the potato mixture back into the potato shells, mounding it slightly. Place the stuffed potatoes on a baking sheet.
- 7. Skip this step as it references a phantom ingredient.
- 8. Bake the stuffed potatoes at 350°F (175°C) for about 20 minutes, or until heated through. Serve warm.
