Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Cook 2 cups of fresh spinach in a skillet over medium heat until wilted, about 3-4 minutes. Drain any excess liquid and set aside.
  3. 3. In a large mixing bowl, whisk together 1 egg, 1/2 cup sour cream, 1/4 cup soy milk, 3 tablespoons shredded mozzarella cheese, 2 teaspoons finely chopped onion, 1/2 teaspoon salt, and 1/8 teaspoon black pepper until well combined.
  4. 4. Add the cooked spinach and 4 ounces of cooked linguine to the bowl. Mix until the pasta and spinach are evenly coated with the sauce.
  5. 5. Transfer the mixture into a lightly greased 10 x 6-inch baking dish or a 10-inch pie plate. Spread it out evenly.
  6. 6. Sprinkle 3 tablespoons of grated Parmesan cheese evenly over the top.
