Vegan Spiced Lentil Stew Recipe

A hearty and flavorful vegan lentil stew, perfect for dinner. Packed with protein-rich red lentils, vibrant vegetables, and a creamy almond butter finish, this dish is both satisfying and nutritious.
Ingredients
- 1 Piece Parsley
- 100 g Sambar Onion Peeled
- 125 g Red Bell Pepper (Lal Shimla Mirchi)
- 100 g Garlic - Single Clove
- 200 g The Butternut Co. Unsweetened Almond Butter
- 100 g Jk Jeera Powder / Cumin Powder
- 200 g Hommade Tomato Puree
- 80 g Knorr Vegetables Stock Cubes
Instructions
- 1. Peel and dice the onions into small chunks. Chop the red bell peppers, removing the seeds, and crush the garlic. Place all the chopped vegetables into a slow cooker.
- 2. Open the can of tomato puree and the can of sweetcorn. Add them to the slow cooker along with the red lentils, chilli powder, cumin, and 1 liter of vegetable stock. Stir everything together.
- 3. Set the slow cooker to medium heat and cook for 4-5 hours, or on low heat for 8-9 hours, stirring occasionally to ensure even cooking.
- 4. One hour before the cooking time is complete, add the almond butter to the slow cooker and stir well to incorporate it into the stew.
- 5. Once the cooking time is complete, blend the stew to your desired consistency if preferred. Serve hot, garnished with fresh parsley.
