Ingredients

  • 100 g Broccoli Florets
  • 200 g Cauliflower Florets
  • 200 g Orange Carrot (Gajar)
  • 100 g Celery
  • 100 g Sambar Onion Peeled
  • 500 ml Conscious Food Cold Pressed Coconut Oil
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)

Instructions

  1. 1. In a large pot, bring 1/2 cup of water, 1 tsp of salt, and 4 tbsp of vegan butter to a boil over medium heat.
  2. 2. While the water is heating, prepare the vegetables: chop 1 cup of broccoli, 1 cup of cauliflower, 1/2 cup of carrots, 1/2 cup of celery, and 1/2 cup of onion into bite-sized pieces.
  3. 3. Once the water is boiling, add the chopped vegetables to the pot and stir to combine.
  4. 4. Bring the mixture back to a boil, then reduce the heat to low and cover the pot.
  5. 5. Simmer the vegetables for about 15 minutes, or until they are tender but not mushy.
  6. 6. Remove from heat and serve the vegetable medley hot as a satisfying vegan dinner.
