Vegan Kale and Polenta Dinner recipe

Ingredients

  • 100 g Kale Leaf
  • 100 g Garlic - Single Clove
  • 180 g Button Mushroom
  • 2.5 Kg Austin Whole Peeled Tomato
  • 500 g Whole Farm Grocery Raisins 500 G
  • 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
  • 60G Primi Piatti Red Chilli Flakes
  • 500 G Kinwaaquinoa

Instructions

  1. 1. Remove the center stem from the kale and discard. Wash and chop the kale leaves, then set them aside.
  2. 2. Mince 1 clove of garlic and slice 4 cups of mushrooms.
  3. 3. Heat 1/2 teaspoon of oil in a large non-stick frying pan or Dutch oven over medium heat. Add the minced garlic, sliced mushrooms, and a pinch of red pepper flakes. Cook, stirring frequently, for about 5 minutes until the mushrooms start to soften. Add small amounts of water as needed to prevent sticking.
  4. 4. Roughly chop 1 large tomato and add it to the pan along with 1/2 cup of raisins. Stir and cook for 2-3 minutes until the mixture is heated through.
  5. 5. Gradually add the chopped kale to the pan, stirring frequently. Add a small amount of water if needed to prevent sticking. Cover the pan and cook until the kale is wilted and tender, about 5-7 minutes. Keep the mixture warm over low heat.
  6. 6. In a medium saucepan, bring 3 cups of water to a boil. Rinse 1 cup of kinwaaquinoa under cold water, then add it to the boiling water.
  7. 7. Reduce the heat to low and continue stirring the quinoa mixture until it thickens and begins to pull away from the sides of the pot, about 15-20 minutes.
  8. 8. To serve, spoon the quinoa onto plates and top with the warm kale and mushroom mixture. Enjoy your vegan dinner!
