Ingredients
- 100 g Kale Leaf
- 100 g Garlic - Single Clove
- 180 g Button Mushroom
- 2.5 Kg Austin Whole Peeled Tomato
- 500 g Whole Farm Grocery Raisins 500 G
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 60G Primi Piatti Red Chilli Flakes
- 500 G Kinwaaquinoa
Instructions
- 1. Remove the center stem from the kale and discard. Wash and chop the kale leaves, then set them aside.
- 2. Mince 1 clove of garlic and slice 4 cups of mushrooms.
- 3. Heat 1/2 teaspoon of oil in a large non-stick frying pan or Dutch oven over medium heat. Add the minced garlic, sliced mushrooms, and a pinch of red pepper flakes. Cook, stirring frequently, for about 5 minutes until the mushrooms start to soften. Add small amounts of water as needed to prevent sticking.
- 4. Roughly chop 1 large tomato and add it to the pan along with 1/2 cup of raisins. Stir and cook for 2-3 minutes until the mixture is heated through.
- 5. Gradually add the chopped kale to the pan, stirring frequently. Add a small amount of water if needed to prevent sticking. Cover the pan and cook until the kale is wilted and tender, about 5-7 minutes. Keep the mixture warm over low heat.
- 6. In a medium saucepan, bring 3 cups of water to a boil. Rinse 1 cup of kinwaaquinoa under cold water, then add it to the boiling water.
- 7. Reduce the heat to low and continue stirring the quinoa mixture until it thickens and begins to pull away from the sides of the pot, about 15-20 minutes.
- 8. To serve, spoon the quinoa onto plates and top with the warm kale and mushroom mixture. Enjoy your vegan dinner!
