Ingredients

  • 250 gm Sweet Corn Kernels
  • 500 g Capsicum Green
  • 200 g Black Salt
  • 10G Red Chili Powder

Instructions

  1. 1. Preheat your oven to 375°F (190°C) to prepare it for baking the stuffed peppers.
  2. 2. Cut the tops off the green peppers (Capsicum Green) and remove the seeds and membranes to create a hollow space for the filling. Set the peppers aside.
  3. 3. In a medium skillet, heat 1 tablespoon of Champion Oil over medium heat. Add the sweet corn kernels and sauté for 3-4 minutes until lightly golden and fragrant. Remove from heat and let cool slightly.
  4. 4. In a mixing bowl, combine the sautéed sweet corn kernels, the juice of 2 green limes, and a pinch of black salt (kala namak). Mix well to create the filling and adjust the seasoning to taste.
  5. 5. Stuff each green pepper with the filling mixture, pressing it down gently to pack as much filling as possible without overfilling.
  6. 6. Place the stuffed peppers upright in a baking dish. Cover the dish with aluminum foil to prevent the tops from drying out. Bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
  7. 7. Remove the foil and bake for an additional 5 minutes to lightly roast the tops of the peppers.
  8. 8. Take the peppers out of the oven and let them cool slightly before serving. Garnish with slices of the remaining green lime for added zest.
  9. 9. Serve the stuffed peppers alongside a chilled soft drink for a refreshing pairing.
