- 250 gm Sweet Corn Kernels
- 500 g Capsicum Green
- 200 g Black Salt
- 10G Red Chili Powder

- 1. Preheat your oven to 375°F (190°C) to prepare it for baking the stuffed peppers.
- 2. Cut the tops off the green peppers (Capsicum Green) and remove the seeds and membranes to create a hollow space for the filling. Set the peppers aside.
- 3. In a medium skillet, heat 1 tablespoon of Champion Oil over medium heat. Add the sweet corn kernels and sauté for 3-4 minutes until lightly golden and fragrant. Remove from heat and let cool slightly.
- 4. In a mixing bowl, combine the sautéed sweet corn kernels, the juice of 2 green limes, and a pinch of black salt (kala namak). Mix well to create the filling and adjust the seasoning to taste.
- 5. Stuff each green pepper with the filling mixture, pressing it down gently to pack as much filling as possible without overfilling.
- 6. Place the stuffed peppers upright in a baking dish. Cover the dish with aluminum foil to prevent the tops from drying out. Bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
- 7. Remove the foil and bake for an additional 5 minutes to lightly roast the tops of the peppers.
- 8. Take the peppers out of the oven and let them cool slightly before serving. Garnish with slices of the remaining green lime for added zest.
